INGREDIENTS
125g butter (softened)
1/2 teaspoon vanilla
1 cup brown sugar
1 egg
2 cups plain flour
1 teaspoon baking powder
1 cup coconut
250g dairy milk chocolate
METHOD
Place butter, vanilla, sugar in a bowl. Beat until creamy, add egg and beat into mixture. Sift flour and baking powder into mixture. Mix in coconut and chocolate. Roll 2 tablespoons of mixture into a ball on baking tray. Bake at 190 for 15 mins.

Cat's Brownie
100g Cocoa
200g Melted Butter
400g Caster Sugar
4 Eggs
2tsp Vanilla Essence
180g Flour
2tsp Baking Powder
200g Chocolate Chips
Sift coca into a large mixing bowl, add melted butter, sugar, eggs and vanilla. Mix to a smooth paste. Sift in four and baking powder and finally add the chocolate chips.

Cat's Butternut & Goats Cheese Lasange
500g butternut squash, peeled and cut into 1.5cm cubes
2tbsp chopped sage
2 garlic cloves, finely chopped
3tbsp extra virgin olive oil
Salt and pepper
200g dried lasagne sheets
250ml slow cooked tomato sauce (can make your own or purchase a pre-made one)
250g spinach, cooked lightly squeezed and chopped
200g mild goats cheese
400ml Bechamel sauce (or good old fashioned cheese sauce)
Grated Parmesan cheese
Preheat oven to 220 oC with a roasting tray inside.

Ingredients
250g softened butter
2cups soft brown sugar
1.5cups cocoa
3cups plain flour
100g white chocolate chunks
Method
Cream butter and sugar. Sift and add cocoa and flour. Add white chocolate chunks. Roll in to balls/ place on a greased baking tray and flatten with a fork. Cook for 10mins on 180deg cel.
